Grilled Kartoffelpuffer (German Potato Pancakes)

Directions:

1. Wash, peel and grate the potatoes (finely grated).
2. Using a dishcloth or cheesecloth, remove as much water as possible from the potatoes.
3. In a large bowl combine all the ingredients. Mix togther throughly. Note: will need to use the mixture quickly.
4. Using the grill's side burner (or preheat the grill to high), heat a non-stick pan add 2 tablespoons of oil to the bottom and heat to medium high.
5. lace 1/3 to 1/2 cup of mixture into a hot pan and flaten with a spoon.
6. Fry both sides of the pancakes for 3-5 minutesm or until golden brown.
7. Remove and quickly dry on papertowels.
8. Serve and enjoy.
