Ingredients:
2 lb Russet potatoes, cleaned and peeled
4 large Eggs
4 strips Bacon
1 medium Onion, diced
1/4 cup Cheddar cheese, shredded
2 tbsp Olive oil
Fresh parsley, chopped, to taste
Pickled jalapenos, chopped, to taste
Salt and pepper, to taste
Cast-Iron Griddle Topper or Cast-Iron Pan
Giddle Dome (melting cover)
Directions:
If using a grill: Place the cast iron griddle or pan on the cooking grid.
Preheat your griddle or grill to medium-high.
Dice potatoes and onion into 1/2 inch pieces. Separate into bowls and set aside.
When the griddle surface or pan reaches 400ºF, place the bacon strips on the griddle and cook until desired doneness.
Remove bacon from heat and drain excess grease, leaving about 2 tablespoons of grease for cooking.
Add diced potatoes to griddle. Grill for about 5 minutes.
Tip: Don’t stir during these 5 minutes for golden, crispy skin.
Roughly chop the cooked bacon. Set aside.
Add diced onion to potatoes and season with salt and pepper.
Grill for 5-10 minutes until potatoes are crispy and onions are soft and translucent.
Reduce heat to medium.
Using the back of a spoon, make 4 wells in the potatoes and onions.
Carefully crack each egg into a well. Season with salt and pepper to taste.
Cover with griddle dome and grill eggs until desired doneness, about 8-10 minutes.
Remove cover and top with chopped bacon and shredded cheese. Cover again and let sit until cheese has melted.
Remove food and top with salt, pepper, fresh parsley, and pickled jalapenos to taste.
Serve and enjoy.
