Pork Burger Mojo

Directions:

Mojo Pulled Pork:

1. Preheat grill to 275°F.
2. Place pork in a large deep pan like a Dutch oven, add garlic cloves, and cover in oil.
3. Cover pan in aluminum foil and place inside the oven.
4. Bake for 4 hours or until pork is tender.
5. Remove the pork from the grill and set aside to cool.
6. Once pork has cooled down, remove the pork from the oil and begin to pull apart.
7. Place pulled meat in a large bowl and season with mojo sauce, chopped parsley and minced shallots.
8. Season with salt to taste.

Pork Patties:

1. Place all ingredients in a large mixing bowl and mix all ingredients well until combined.
2. Shape into 4 patties and refrigerate until ready to cook.

Mojo Sauce (Yield: 4 cups):

1. Place all ingredients in a blender except for the oil.
2. Blend until a smooth puree, then add oil slowly while blending to emulsify.

Mojo Alioli (Yield: 1-1/2 cups):

1. Place all ingredients in a food processor.
2. Puree until smooth.

Build Burger:

1. Heat grill to a medium high heat.
2. Grill pork patties, covered, over medium heat for 4-5 minutes on each side or until a thermometer reads 160°F.
3. Half the brioche buns and brush both sides with clarified butter.
4. Grill the bread to warm through.
5. Remove buns from heat.
6. For each burger, spread each bun with 1 teaspoon mojo alioli.
7. Top bun with cooked patty and 1/4 cup of mojo marinated pulled pork.
8. Serve and enjoy
