Toasted Pecan Tilapia

Ingredients:
4 Tilapia Fillets, about 6 oz each
1/4 c Pecans, well-toasted
1/2 c Seasoned Breadcrumbs
1/2 tsp Salt
1/2 tsp Garlic Powder
1/2 tsp Black Pepper
1/4 cup Flour
1/2 cup Buttermilk
2 tsp Hot Sauce, your favorite
Butter, for skille
Additional Items:
Cast Iron Skillet
3 Bowls
3 Plate/Shallow Bowls
Directions:
On the grill's side burner or on the grills cooking grids, preheat cast iron skillet to medium-high.
Finely chop the toasted pecans.
Combine the chopped pecans with the breadcrumbs, salt, pepper, and garlic powder.
Dump the flour on a separate plate.
Combine the buttermilk and the hot sauce in a shallow bowl.
Dredge both sides of a fish fillet in the flour so that it’s covered with a thin coating of flour.
Dip it in the buttermilk so that both sides are covered.
Press both sides of the fish in the pecan and breadcrumb mixture.
Melt some butter in the cast iron pan.
Place fish into cast iron pan, and cook for about 3 minutes, until bottom is golden brown with a nice crust.
Remove and serve.
