IPA Pineapple Teriyaki Skewers

Directions:

1. Place the pineapple pieces, grated ginger and the 1 cup of water in a small pot. Place on the grill's side burner and boil for 15 minutes.
2. Remove from heat and blend with hand held blender or in a full size blender until smooth.
3. Return to pot and bring to simmer.
4. If using pineapple juice replace above steps with: Bring pineapple juice and grated ginger to simmer.
5. Add the brown sugar, the soy sauce and IPA.
6. Simmer for 5 minutes and add cornstarch slurry (1 tbsp corn starch + 2 tbsp cold water, mixed to create a corn starch slurry).
7. Stir to thicken sauce and remove from heat. Let cool off.
8. Preheat grill to medium-high.
9. Prepare shrimp and pineapple skewers (alternate shrimp and pineapple).
10. Lightly brush or spray skewers with oil so they do not stick to grill's surface.
11. While cooking each side apply IPA teriyaki with a brush.
12. Cook about 2 min per side.
13. Remove skewers from grill and apply another generous brushing of IPA teriyaki.
14. Serve.
