Bison Burger with Bourbon Glaze

Directions:

Bourbon Glaze:

1. In a medium sauce pan, add bourbon, brown sugar, crushed red pepper, salt, black pepper, and water.
2. Place the sauce pan on the grills side burner, on medium heat.
   Cook's Tip: If your grill doesn't have a side burner, you can place your oven safe pan on the grill's cooking grid directly over the heat.
3. Allow the mixture to simmer until it reaches a light syrup consistency.
4. Once done remove from the heat or turn on low if the bison burgers are not ready.

The Burger:

1. Preheat grill to medium-high.
2. Place the ground bison meat a large bowl.
3. Add to the bowl salt, garlic, pepper, the egg, and panko breadcrumbs.
   Note: Since bison is a very lean and rich meat, adding these binder ingredients helps the burger stay together while cooking.
4. Mix thoroughly. Make sure the egg and breadcrumbs are well incorporated.
5. Form the meat mixture into two patties.
   Note: these will be 1/2 lb burgers.
6. Place the burgers and onions on the hot side of the grill.
7. After 2 minutes, flip the burger and onions.
8. When the burger is half way cooked, flip the burger again.
9. When the burger is almost done, place the buns on the grill to toast them.
10. Once the burger and onions are done to desired doneness, remove the buns, burger, and onions from the grill.
11. Place the bottom buns on a tray.
12. Place the bison burgers on the bottom buns.
13. Place bacon strips on top of each burger.
14. Place the onions on top of the bacon.
15. Drizzle the bourbon glaze over the burger.
16. Add the top bun, and secure with a skewer.
17. Serve and enjoy.
