Ingredients: 4 Cornish Game Hens (1 1/2 lb ea); 1/2 Onion, chopped; 3 cloves Garlic, peeled and chopped; 1 cup Lemon Juice; 1/2 cup Olive Oil; 1 tbsp White Wine; 1 tsp Worcestershire Sauce; 1 tsp Hot Pepper Sauce, or more to taste; 1 Tbsp Pepper; 1 tsp Celery salt; 1 tsp Salt; Additional Item:; Large Bowl

4	Cornish Game Hens (1 1/2 lb ea)
1/2	Onion, chopped
3 cloves	Garlic, peeled and chopped
1 cup	Lemon Juice
1/2 cup	Olive Oil
1 tbsp	White Wine
1 tsp	Worcestershire Sauce
1 tsp	Hot Pepper Sauce, or more to taste
1 tbsp	Pepper
1 tsp	Celery Salt
1 tsp	Salt

Tips:

Grilling time is less if the hens are spatchocked (split in half).
Use your instant read thermometer to be sure of doneness.
I know sometimes even with burners on low it gets too hot. I take my metal tongs and put the tip between the lid and the grill to hold it open just a bit. Does the trick. Remember to keep your pot holder handy, they may get hot.

Directions:

In a large, non-reactive bowl, mix onion, garlic, lemon juice, olive oil, white wine, Worcestershire sauce, hot pepper sauce, pepper, celery salt, and salt.
Place Cornish game hens in the bowl, coating evenly with the marinade mixture.
Cover, and marinate in the refrigerator at least 4 hours.
Preheat an outdoor grill for medium heat (300-350°F), and lightly oil grate.
Place hens on the grill.
Grill hens about 1 hour (less if spatchcocked), until no longer pink and juices run clear and the internal temperature reaches 165°F.
Remove from the grill and serve.
