Buffalo Chicken Tacos

Directions:

Preparing the Sauce

1. In a medium sauce pan, add buffalo wing sauce, butter, salt, pepper, onions, heavy cream, and chicken stock.
2. Place the sauce pan on the grills side burner, on medium heat.
   Cook's Tip: If your grill doesn't have a side burner, you can place your oven safe pan on the grill's cooking grid directly over the heat.
3. Heat and stir until everything is throughly melted, combined, and sauce is warm.
4. Once done remove from the heat or turn on low if the chicken thighs are not ready.

Preparing the Chicken

Cook's Tip: Chicken thighs are preferred over chicken breast because thighs are more moist and flavorful.

1. Preheat grill to medium-high.
2. In a large mixing bowl, add the chicken thighs, oil, salt, and pepper.
3. Mix thoroughly.
4. Place the chicken thighs on the grill, flat side down (skin side).
5. Every 2 - 4 minutes, turn the chicken thighs over. You want them golden brown.
6. Continue to cook until chicken reaches an internal temperature of 165℉.
7. Once the chicken is cooked, remove from the grill and place them on a tray.
8. Do not turn the grill off, you will need it next.

Flavoring the Chicken

1. Make sure your grill is on medium-high.
2. Dip each piece of cooked chicken thigh into the sauce pan and coat evenly.
3. Place immediately back on the grill.
4. Repeat steps 2 & 3 for all the chicken thighs.
5. Once the sauce sets, remove the chicken thighs from the grill and place on a plate.
   ⚠ Important: If using bone-in chicken thighs, carefully remove any bones from the chicken thighs, you only want the meat. Place the meat into a bowl.
6. Break the chicken thighs up so you can place them in the tacos.

Assembling the Tacos

1. Place the flour tortillas in the taco holder.
2. Add desired amount of the chicken thigh meat to the tortillas.
3. Top with mozzarella cheese.
4. Add some blue cheese.
5. Add a couple jalapeño slices.
6. Finish with some fresh cilantro sprigs, and a lime wedge.
7. Serve and enjoy.
