BBQ Chicken Quesadilla

Directions:

1. If using a grill, place griddle topper on the cooking grids.
2. Preheat grill or griddle to medium-high.
3. Place the ground chicken in a large mixing bowl.
4. Add the BBQ rub, diced onion, salt, and cilantro into the mixing bowl. Mix well.
5. Add some vegetable/olive oil to the griddle surface.
6. Remove half of the ground chicken mixture from the bowl and form into a ball.
7. Place the ball onto the griddle surface.
8. Using the burger press, flatten the ball down to approximately a 9-inch diameter patty.
9. Repeat steps 6 - 8 for the remainder of the ground chicken mixture.
10. Grill for approximately 2 minutes.
11. Flip and grill for another 2 minutes, or until the internal temperature of 165℉.
12. Flip the chicken patties over.
13. Spread 1 tbsp BBQ sauce evenly on each patty.
14. Add the jalapeños slices to each patty.
15. Add 1 tbsp of nacho cheese sauce in the center of each patty.
16. Place 1/4 cup of cheddar jack cheese on top of each chicken patty, covering the patty completely.
17. Place a flour tortilla on top of the cheese on each patty.
18. Flip the each patty over, so the flour tortilla is on the bottom.
19. Repeat adding the the BBQ sauce, jalapeño slices, nacho cheese sauce, cheddar jack cheese and top with another flour tortilla to the top of the chicken patty.
20. Immediately flip, to toast the other flour tortilla.
21. Once both sides are crispy, remove from the griddle surface and place on a cutting board.
22. Cut each quesadilla into 4 quarters and shingle on a platter.
23. Add 1/2 tsp of sour cream in the center of each triangle.
24. Sprinkle sliced green onion on top of the sour cream.
25. Serve and enjoy.
