Ingredients:
Dressing:
Reduced-fat Mayonnaise
Finely Grated Lime Rind
Minced Fresh Mint
Fresh Lime Juice
Sugar
Minced Serrano Chile (with seeds)
Sandwich:
Minced Fresh Mint
Fresh Lime Juice
Dark Rum
Ground Cumin
Garlic, crushed
Chicken Breast Tenders
Vidalia or Other Sweet Onion
Salt
Freshly Ground Black Pepper
French Rolls, halved
Tomato Slices
Red Leaf Lettuce Leaves
Additional Items:
• Small Bowl
• Plastic Wrap
• Resealable Plastic Storage Bag
• Non-stick Cooking Spray
Directions:
To prepare dressing, combine all dressing ingredients in a small bowl, stirring with a whisk.
Cover and chill.
To prepare sandwich, combine 1 tbsp mint and next 4 ingredients (through garlic) in a resealable plastic storage bag.
Add chicken breast tenders; seal and marinate in refrigerator for 15 minutes, turning occasionally.
Preheat grill to medium-high.
Remove chicken from bag; discard marinade.
Place chicken and onion on cooking grids coated with cooking spray.
Grill 4 minutes on each side or until chicken is done and onion is tender (165℉).
Remove from grill; sprinkle chicken with salt and pepper.
Grill roll halves, cut side down, until lightly toasted, about 1 minute.
Spread about 1 tbsp dressing over the bottom halves of the rolls.
Top each serving with 3 oz chicken breast tenders, 1 onion slice, 2 tomato slices, and 1 lettuce leaf; cover with top halves of rolls.
