Ingredients: 2 pounds 402D Leg (Outside Muscle cut into 1-inch cubes); 2 tablespoons worcestershire sauce; 1 tablespoon kosher salt; 1/2 tablespoon black pepper (fresh ground); 1/2 tablespoon dark brown sugar; 1 1/2 cups Duke's Mayonnaise; 1 cup cider vinegar; 3/4 cup granulated sugar; 1 clove garlic (peeled); 2 shallot (large, peeled, rough chop); 1 tablespoon kosher salt; 1/2 tablespoon black pepper; 1 teaspoon cayenne pepper

Prep Time: 50 - 70 minutes
Cook Time: 15 - 25 minutes

Ingredients:

2 lb 402D Leg (Outside Muscle cut into 1-inch cubes)
2 tbsp worcestershire sauce
1 tbsp kosher salt
1/2 tbsp black pepper (fresh ground)
1/2 tbsp dark brown sugar
1 1/2 cups Duke's Mayonnaise
1 cup cider vinegar
3/4 cup granulated sugar
1 clove garlic (peeled)
2 shallot (large, peeled, rough chop)
1 tbsp kosher salt
1/2 tbsp black pepper
1 tsp cayenne pepper

Directions:

In a blender add all ingredients and puree well to combine and set aside.
In mixing bowl combine Worcestershire, salt, pepper and sugar and mix well.
Completely coat the pork in the marinade and allow to marinate for 1 hour.
On well soaked skewers, place pork cubes.
Preheat grill to medium-high. Place pork skewers and grill until well caramelized and reaches an internal temperature of approximately 142°F and let rest for 3-4 minutes.
Toss in sauce and serve.
