Secreto with Romesco Sauce

Ingredients:

• 2 lbs Pork Secreto (skirt steak) or thin boneless pork loin chops
• Smoked Paprika
• Salt
• Ground Black Pepper
• Lemon Wedges, for serving

• 1 Dried Ancho or Pasilla Chile
• 1 Red Bell Pepper, halved and seeded
• 2 lg Ripe Tomatoes
• 3 Cloves Garlic, peeled and skewered on toothpicks
• 1 slice Country-style White Bread
• 1/2 cup Blanched Almonds, toasted  
• 1/3 cup Extra Virgin Olive Oil
• 2 tbsp Sherry Wine Vinegar, or more to taste
• Salt and Freshly Ground Black Pepper
