Backyard Party Ribs

Directions:

Preparation

1. Prepare the Grill.
   1. Set grill to medium-high heat.
   2. Place wood chips in a smoker tray or smoker pouch.
   3. Place smoker tray/pouch on the grill above the heat.
   4. Close lid.
2. Prepare the Ribs
   1. Lightly trim the ribs.
   2. Remove the "silver skin" (or membrane) from the back of the ribs.
      Tip: Use a paper towel to pull off the membrane after finding an area where it has started to peel back.

4. Cut and Season
   1. Trim off a small end piece.
   2. Cut the ribs in between the bones.
   3. Place the ribs in a pan.
   4. Generously sprinkle BBQ rub all over the ribs and toss them again.

Cooking

1. Place the seasoned ribs directly on the cooking grids, over the heat. Close the lid.
2. Turn the ribs every 20 minutes for about the next hour.
3. When the ribs start to become very soft and tender, about 45 - 50 minutes (minimum of 145℉; ideal tenderness 195℉ - 205℉), drizzle or mop them with your favorite BBQ sauce. Leave the ribs in place so the BBQ sauce can adhere to the ribs.
4. After 5 - 10 minutes, turn the ribs and brush the ribs again. Leave the ribs in place so the BBQ sauce can adhere to the ribs.
5. After 5 - 10 minutes and the sauce is set, remove the ribs from the grill.
6. Stack the ribs on a plate.
7. Serve and enjoy.
