LA Street Dogs

Directions:

1. If using a grill, place griddle topper on the cooking grids.
2. Preheat grill/griddle to medium-high.
3. Wrap each hot dog evenly with a slice of bacon. Tuck in the ends of the bacon into the wrap.
4. Place the hot dogs onto the griddle topper or griddle.
5. Rotate hot dogs until the bacon is crispy and has a brown color.
6. While the hot dogs are cooking, make the pico de gallo.
   1. In a mixing bowl, add diced tomatoes, diced jalapeño, diced onion, chopped cilantro, and salt.
   2. Mix well.
   3. Set aside.
7. Butter the inside of the hot dog buns.
8. Place the buns, butter side down, on the griddle topper or griddle.
9. Grill for about 1 minute, until golden.
10. Remove the buns and place on a cutting board.
11. Brush the inside of the bun with mustard.
12. Remove the hot dogs from the flat top and place on the buns.
13. Top with each of the hot dogs with 2 tbsp of pico de gallo.
14. Place the hot dogs on a plate.
15. Garnish the plate with sliced pickled jalapeños.
16. Serve and enjoy.
