Ingredients: Shrimp Skewers:; 1 lb Shrimp, peeled and deveined; 1 lg Lime Juice; 3 tbsp Olive Oil; 2 cloves Garlic, minced; 2 tsp Chili Powder; 1/2 tsp Ground Cumin; 1/4 tsp Paprika; 1/2 tsp Salt; 1/4 tsp Freshly Ground Black Pepper; 1/4 tsp Red Pepper Flakes; Skewers; Creamy Avocado Cilantro Sauce:; 1 Avocado, split and pitted; 1/2 cup Lowfat Greek Yogurt; 1 clove Garlic, minced; 2 tbsp Cilantro, chopped; 1 lg Lime Juice; Salt, to taste; Pepper, to taste; Additional Items:; Resealable Plastic Storage Bag; Food Processor

Ingredients:

Shrimp Skewers:

Shrimp, peeled and deveined
Lime Juice
Olive Oil
Garlic, minced
Chili Powder
Ground Cumin
Paprika
Salt
Freshly Ground Black Pepper
Red Pepper Flakes
Skewers

Creamy Avocado Cilantro Sauce:

Avocado, split and pitted
Lowfat Greek Yogurt
Garlic, minced
Cilantro, chopped
Lime Juice
Salt, to taste
Pepper, to taste

Additional Items:

• Resealable Plastic Storage Bag
• Food Processor

Directions:

In a small bowl whisk together lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, pepper and red pepper flakes.
Pour into a resealable bag and add shrimp.
Toss to coat and marinate for 30 minutes.
Preheat the grill to medium heat.
Put the shrimp on skewers and place on the grill.
Grill on each side for about two minutes or until no longer pink.
To make the creamy avocado cilantro sauce:
1. Add the avocado, Greek yogurt, garlic, lime and cilantro.
2. Pulse in a food processor until smooth.
3. Add salt and pepper to taste.
Serve immediately with shrimp.
