Ingredients:
Chicken Breast, boneless
10-inch Pitas
Olive Oil
Greek Yogurt, plain
Lemons
Cucumber, unpeeled
Purple Onion, sliced thin
Roma Tomatoes, sliced thin
Lettuce
Marinade:
Olive Oil
Lemon Juice
Garlic Powder
Dried Oregano
Dried Thyme
Onion Powder
Dried Parsley
Salt, to taste
Pepper, to taste
Tzatziki:
Greek Yogurt, plain
Cucumber
Fresh Dill, finely chopped
Lemon Juice
Garlic Powder
Kosher Salt, to taste
Additional Items:
• Resealable Plastic Storage Bag
• Small Bowl
• Cheesecloth or Mesh Sieve
• Medium Bowl
• Cast-iron Griddle (if using a grill)
• Parchment Paper
Directions:
Cut chicken breast into strips and add to resealable storage bag.
In a small bowl, combine marinade ingredients.
Pour marinade over chicken strips and massage gently to coat.
Tightly seal storage bag and refrigerate for at least 30 minutes, or up to 12 hours.
Grate 1/2 cucumber into a cheesecloth or mesh sieve to drain excess water.
Transfer to a medium bowl and add remaining tzatziki ingredients. Stir to combine.
Cover tzatziki and place in refrigerator for at least 1 hour before serving.
If using a grill, place cast iron griddle on cooking grid.
Preheat grill or griddle to medium (375℉).
When cooking surface reaches 375℉, lightly brush with olive oil.
Remove chicken from marinade and place directly on grill.
Grill for 8 - 10 minutes, flipping halfway. Until internal temperature reaches 165℉.
Prepare fresh vegetables. Thinly slice onion, tomatoes, and other 1/2 cucumber. Rinse and dry lettuce leaves. Set all aside.
Quickly warm pitas on the griddle or grill, grill for about 1-2 minutes per side.
Remove pitas from heat.
Fill each pita with chicken strips, lettuce, thinly sliced vegetables, and tzatziki.
Tip: wrap the bottom half of each gyro in parchment paper for less of a mess.
Serve and enjoy.
