Sky-High Grilled Cheese

Directions:

1. Preheat griddle to medium-high. If using a grill, place griddle topper on cooking grids, then preheat grill to medium-high.
2. Place some of the butter on the griddle, enough to cover the Texas toast bread slices.
3. Place the Texas toast bread slices on the butter.
4. Once the bread slices are golden brown (about 2 minutes), flip bread over.
5. Place 1 slice of cheddar, pepper jack and American cheese on each slice of bread.
6. Once the cheese starts to melt, on the first slice of bread, place three (3) mozzarella sticks on top of the cheese.
7. Place the next slice of bread on top of the mozzarella sticks.
8. Place three (3) mozzarella sticks on cheese slices on top of the second slice of bread, in the opposite direction.
9. Place the third slice of bread cheese side down on the mozzarella sticks.
10. Press the sandwich down.
11. Flip the sandwich.
12. Continue to cook and flip the sandwich until the cheese is melted.
13. Once done, remove the sandwich.
14. Insert a wooden skewer on opposite corners of the sandwich.
15. Cut the sandwich in half with a serrated knife.
16. Serve and enjoy.
