Smoked Margarita Wings

Directions:

1. Preheat grill to medium-high.
2. Place wood chips in a smoker tray or smoker pouch.
3. Prepare the sauce:
   1. Place butter, chopped garlic, fresh lime juice, hot honey, and a little tequila in a sauce pot.
   2. Place sauce pot on the cooking grids over direct heat until the butter melts. Move to the side of the grill once it has melted.**
4. Place tray or smoker pouch on the grill. Close the lid.
5. Close the lid and let the wood chips to smoke.
6. In a large mixing bowl, place the chicken wings (drums and flats).
7. Add the chimichurri sauce and oil.
8. Mix until wings are thoroughly coated.
9. Once the grill begins to smoke, reduce grill temperature to medium (250℉ - 275℉).
10. Stir the sauce in the sauce pot.
11. Place the seasoned chicken on the grill. Close the lid.
12. After a couple of minutes, flip and rotate the chicken.
13. Cook for about 45 - 60 minutes, until the internal temperate is 165ºF.
    Note: You will need to continue to flip and rotate the chicken to make sure everything is evenly cooked.
14. While cooking, thoroughly wash the large bowls you will need to reuse them.
15. Once the chicken is done (internal of 165℉), remove from the grill and place in the large bowl.
16. Remove the sauce from the grill/side burner. Note: The sauce should have reduced down to a glaze-like consistency.
17. Pour the glaze over the wings.
18. Stir the wings to make sure they are thoroughly coated.
19. Place the wings on a plate or tray.
20. Drizzle with cilantro lime ranch dressing.
21. Serve and enjoy.

** If the grill has a side burner: Place sauce pot on the side burner on medium until the butter melts. Then turn the burner down to low.
