Ingredients:
Russet Potatoes
Red Bell Pepper (seeds removed & chopped into large pieces)
Red Onion (peeled & chopped into large pieces)
Purple Onion (peeled & chopped into large pieces)
Corn (cut into 1 inch discs)
Cherry Tomatoes
Mushrooms (cleaned & chopped into large pieces)
Zucchini (sliced thinly lengthwise)
Vegetable Oil
Skewers (if using wood, soak in water for 24 hours before using)
Sea Salt, to taste
Black Pepper, to taste
Favorite dipping sause
Directions:
Preheat grill to medium high heat.
Wash and cut all vegetable per ingredients section.
Wrap a strip of the Zucchini around the Russet potatoes and place onto the skewers. Slide all the way down to the bottom. Make sure to leave room at the bottom to allow for flipping.
Place the vegetables, if any order, on the skewers. Make sure to leave enough room at the top to allow for flipping.
Brush with vegetable oil and season with sea salt and black pepper.
Place on the grill.
Grill for 10 - 15 minutes, turning half way to ensure even cooking.
If browning too quickly, move to the perimeter of the grill or cooler area.
Remove once everything is cooked.
Serve with your favorite dipping sauce, if desired, and enjoy.
