Waldorf Slaw

Directions:

1. Leaving the core intact, lay the cabbage on its side and cut lengthwise into quarters; thinly shred by slicing across the cabbage until you get to the thicker core pieces. 
2. Place the cabbage shreds in a large bowl.
3. Fill a medium bowl halfway with water and squeeze in the juice from half of the lemon. 
4. Dice the apple and put the pieces in the water with the lemon juice. 
5. The acid in the lemon will keep the apple from browning. 
6. Leave them soaking until you are ready to assemble the slaw.
7. Light your grill's side burner.
8. Toast the walnuts in a small non-stick pan over medium heat just until fragrant; about 1 to 3 minutes. 
9. Stir frequently so the walnuts don't burn. 
10. Remove from the heat and cool.
11. Stir together the dressing ingredients and assemble the slaw.
12. Drain the apples and pat with paper towels so they are not wet going into the slaw. 
13. To the bowl of cabbage, add the apples, toasted walnuts and sliced celery.
14. Spoon in the dressing and toss to combine. 
15. Cover and refrigerate for an hour before serving.
