Ingredients: 2 Baguette (cut to patty size); Cilantro (As needed, picked); 2 cups Water; 3 tablespoons Coconut vinegar; 1/2 tablespoon Salt; 2 tablespoons Sugar; 1/2 pound Red bell pepper (julienned); 1/2 pound Carrots (julienned); 1/2 pound Cucumber (julienned); 1 pound Ground pork; 1 Shallots (minced); 2 cloves Garlic (minced); 5 tablespoons Sugar; 1/4 cup Fish sauce; 2 tablespoons Salt; 1/4 cup Black pepper; 2 cups Carrots (minced); 1 1/2 cups Wood ear mushrooms (minced); 1 cup Bean threads ((Asian cellophane noodles) minced); 2 tablespoons Bonito flakes; 3 Spring onions (minced)

Ingredients:

2 Baguette (cut to patty size)
Cilantro (As needed, picked)
2 cups Water
3 tbsp Coconut vinegar
1/2 tbsp Salt
2 tbsp Sugar
1/2 lb Red bell pepper (julienned)
1/2 lb Carrots (julienned)
1/2 lb Cucumber (julienned)
1 lb Ground pork
1 Shallots (minced)
2 cloves Garlic (minced)
5 tbsp Sugar
1/4 cup Fish sauce
2 tbsp Salt
1/4 cup Black pepper
2 cups Carrots (minced)
1 1/2 cups Wood ear mushrooms (minced)
1 cup Bean threads ((Asian cellophane noodles) minced)
2 tbsp Bonito flakes
3 Spring onions (minced)

Directions:

For the Vietnamese Sausage Patties:
1. Combine all patty ingredients, form patties.
2. Place on the grill or grilled.
3. Cook through on a griddle or grill.
For the Pickled Vegetables:
1. Combine water, vinegar, salt, and sugar in a small saucepan and bring to a simmer over low heat, letting salt and sugar dissolve.
2. Pour over vegetables and reserve.
