Smashed Breakfast Tacos

Directions:

1. Preheat griddle/grill to medium-high (350℉).
   Note: If using a grill, place griddle topper on the grill before preheating.
2. Form breakfast sausage into 2 oz - 3 oz balls (about 1/6th of a pound).
3. Place 1 breakfast sausage ball into middle of the tortilla and spread out evenly.
4. Place the tortillas meat side down on the griddle.
   Tip: Don’t season until after you flip them. This will help prevent any seasoning from burning.
5. After a couple of minutes, flip the tortillas over.
6. Season sausage with Waylon & Willie's BBQ Rub.
7. Sprinkle shredded cheese over the sausage.
   Tip: To help speed up the melting process you can use a griddle dome.
8. While the cheese is melting, scramble eggs on the other side of the griddle and cook until done.
9. Carefully remove the tortillas and add a good helping of the cooked scrambled eggs in the middle.
10. Place in the taco stand or on a serving plate.
11. Top with pico de gallo.
12. Serve and enjoy.
