Ingredients: 1 Pork Knuckle (1 inch cubes); 1 Lemon (charred and juiced); 1 cup Honey; 2 cups Balsamic Vinegar; 1 cup Olive Oil; 1 Red Onion (thinly sliced); 3 Kiwi Fruit (chopped); Pork Sausage, to taste, basic, cut into 1-1/2 inch pieces); Fresh Bay Leaves, to taste; Kosher Salt, to taste; Black Pepper, to taste, ground); Additional Items:; Skewers; Large Bowl

Prep Time: 6 - 12 hours
Cook Time: 5 - 10 minutes

Ingredients:

Pork Knuckle (1 inch cubes)
Lemon (charred and juiced)
Honey
Balsamic Vinegar
Olive Oil
Red Onion (thinly sliced)
Kiwi Fruit (chopped)
Pork Sausage, to taste, basic, cut into 1-1/2 inch pieces
Fresh Bay Leaves, to taste
Kosher Salt, to taste
Black Pepper, to taste, ground

Additional Items:

• Skewers
• Large Bowl

Directions:

Combine marinade ingredients.
Add pork knuckle to marinade and let sit overnight.
To assemble skewer, alternate fresh bay leaves, Pork Knuckle, and sausage using 3 pieces of each.
Season with salt and pepper and grill until pork is cooked through.
Finish with charred lemon juice and olive oil.
