Loaded Smashed Potatoes

Directions:

1. Preheat grill to medium-high.
2. Place the potatoes in a mixing bowl, drizzle the potatoes with olive oil, and add kosher salt and mix well.
3. Place the potatoes on the warming rack (or indirect side) of the grill.
4. Grill potatoes for approximately 20 minutes, or until potatoes are soft.
5. Remove the potatoes from the grill and place them on a cutting board.
6. If using a grill, place the griddle topper on the cooking grates.
7. Using a spatula or burger press, press down on the potatoes.
8. Add cheddar jack cheese on each potato, approximately 1 tsp on each.
9. Add the diced bacon on top of the cheese, approximately 1/2 tsp on each.
10. Place the potatoes back on the griddle topper.
11. Once the cheese has melted, remove the potatoes and place on a plate.
12. Top each potato with a 1/2 tsp sour cream.
13. Sprinkle with sliced green onions.
14. Serve and enjoy.
