Charlie's St. Louis Ribs

Directions:

1. Allow rib to warm to room temperature.
2. Preheat grill to medium-low (250-300ºF) and set for indirect cooking.
3. In a medium bowl, mix together brown sugar and rub.
4. Rub the mixture on the ribs.
   Note: Use about two-thirds on the meaty side and one-third on the bony side.
5. Place the ribs on the cooking grid, meaty side up.
   Note: use a rib rack if necessary.
6. Grill for about 1 to 1-1/2 hours. Note: The exact cooking instructions will depend on your equipment, but you should cook them slowly until they are nicely caramelized and looking great.
7. Remove the ribs from the grill and place on a sheet pan. Do NOT turn off the grill.
8. Adjust the grills temperature to 325°F.
9. Create sheets of aluminum foil that are large enough to wrap around the ribs.
10. Please the ribs in the aluminum foil and coat both sides of the ribs with honey and apple juice.
11. Wrap the ribs with the aluminum foil, trying to prevent any leaking.
12. Place the ribs back on the grill and grill for about another hour.
    Note: Grilling time may vary.
    Tip: Test the ribs by sticking them with a toothpick to see when they are soft and tender.
13. Remove from the grill and let rest for 10-15 minutes.
14. Cut and serve.
